But <strong>Holger Bodendorf<\/strong> wants the portion to be exactly that size because he\u2019s waging his own personal campaign against food waste. \u201cIn return, guests are welcome to order more rice pudding as many times as they like,\u201d he says, explaining his decision against lavish, excessive portions. The guest at the <strong>Stricker Country House<\/strong>, the only one of <strong>GreenSign<\/strong> certified hotel on the island <strong>Sylt<\/strong>, comes to appreciate the diverse selection of small dishes. After the rice pudding, he might order the fried egg, under which the shrimp are perfectly hidden. Holger Bodendorf, who has managed the hotel\u2014a member of the Relais &amp; Ch\u00e2teaux association\u2014since 2001, is working on a consistent sustainability strategy that combines luxury with down-to-earth charm. And he\u2019s doing so on an island that repeatedly runs the risk of falling victim to overtourism. Short distances, high-quality courses, a perfect nature experience, and a wide selection of hotels and restaurants &#8211; what more could you ask for? Much like on German golfers\u2019 second-favorite island, Mallorca in Spain, however, Sylt is now about more than just constantly increasing the number of overnight stays and revenue. With the motto\u00a0 <strong>A Great Place to Live\u2014Sustainable Sylt<\/strong> Sylt Marketing GmbH has launched its own initiative that brings together sustainable lodging providers, restaurants, and local manufacturers. The train from Husum to Westerland on Sylt is full of people who, for the most part, do not speak German and who, as employees, largely serve the island\u2019s service sector every day. Anyone discussing golf tourism on Sylt must also consider the issue of staff. Whether they\u2019re hotel staff or greenkeepers on the golf courses, many of the employees commute to the island by train every day because housing on the mainland\u2014unlike on the island\u2014is still affordable. Social justice also means providing all these people with decent working conditions and, ideally, housing. This, too, is a key objective of the island\u2019s new sustainability strategy: To be able to offer high quality in the future, staff must also be able to expect reasonable working conditions in the long term. Above all, the regional origin of the products and short transportation distances &#8211; whether for deliveries or laundry &#8211; are important to him. The approach is always such that the topic is neither overwhelming nor too obvious to the guest. As at Landhaus Stricker, the focus here is also on a luxury vacation. However, the commitment to making it as sustainable as possible is also evident in the details. Exotic flowers, for example, are a no-go. Sustainability is therefore linked to tangible quality and the long-term viability of a vacation destination.<\/p>\n<p>For Holger Bodendorf, a new way of thinking within<strong> the Relais &amp; Ch\u00e2teaux Association\u2019s Culinary Council<\/strong> served as a starting point. \u201cWe\u2019ve managed to completely remove bluefin tuna from our restaurants and also protect eel,\u201d he says, describing their successes. He himself, through Landhaus Stricker, is a member of <strong>Feinheimisch<\/strong>, an association of restaurateurs, hoteliers, and producers from Schleswig-Holstein who are firmly committed to regional sourcing.
